Ok Ok I didn’t actually make these myself BUT my husband did and that counts!!!! If you know me you know I am not a fan of the kitchen and I for sure cannot bake BUT I am really good at buying ingredients for things I hope to make…. one day. I had been hoarding almond flour for awhile now so it was time to try and make something with it and low and be hold Kim put these cookies together and they were REALLY good so I am sharing the recipe with you.
Ingredients:
1/4 cup of Brown sugar but we used “>Erythritol
1/2 tsp baking soda
1/4 tsp salt
2 tbsp of butter at room temp.
1 tsp of “>apple cider vinegar
2 tsp of vanilla extract ( optional)
1 large egg
2 cups of “>almond flour
1/2 cup of low sugar “>chocolate chips
If your into Instructions…. I am more of a toss it all in and mix kinda person BUT my husband followed the directions so:
-Preheat the oven to 375°F. line two baking sheets with “>parchment paper because who has time for greasing!!
-In a large bowl, combine the sugars, butter, salt, vanilla and almond extracts, vinegar, and baking soda, beating until smooth and creamy.
-Beat in the egg, again beating until smooth. Scrape the bottom and sides of the bowl with a spatula to make sure everything is thoroughly combined.
– Mix in the flour, then the chips.
– Use a spoon (or a tablespoon cookie scoop) to scoop 1 1/4″ balls of dough onto the prepared baking sheets, leaving 2″ between them on all sides; they’ll spread.
– Bake the cookies for 11 to 12 minutes, until their edges are brown and their tops are light golden brown….. get them out before they burn essentially!!!
I don’t actually know the carb content of these cookies but since we used almond flour and Erythritol I am counting them as low carb…. I am not a details person as you can tell:)
